Ingredients
- Salmon fillets (can be skin on or skin off)
- Grape seed oil (or olive oil)
- Salt & Pepper (to taste)
- Thyme (optional, to taste)
- Basil (optional, to taste)
- 1-2 Lemon(s) (sliced)
Directions
- Prepare the grill for direct cooking over high heat, 450°F-550°F. Brush the cooking grates clean and close the lid to heat.
- Generously coat the flesh side (if skin on, both sides if skin off) of the salmon fillets with oil.
- Season evenly with kosher salt and black pepper, as well as any other optional herbs.
- Squeeze a small amount of lemon juice from the lemon onto the fillets.
- If skin on: Grill skin side down with lid closed for 6-8 minutes or until the fish lightens in color.
- Then flip the salmon over and grill at 130°F for 2-4 minutes for medium-rare or longer until desired doneness.
- If skin off: Grill 3-5 minutes on one side with lid closed or until the fish lightens in color.
- Then flip the salmon over and grill for 3-5 minutes for medium-rare or longer until desired doneness.
- Transfer to a platter, squeeze the remaining lemon juice on the fillets then rest for 1-2 minutes before serving.
