Prepare the grill for direct cooking over high heat, 450°F-550°F. Brush the cooking grates clean and close the lid to heat. 2. Generously coat the flesh side (if skin on, both sides if skin off) of the salmon fillets with oil. 1. Season evenly with kosher salt and black pepper, as well as any other optional herbs. 3. Squeeze a small amount of lemon juice from the lemon onto the fillets. 4. If skin on: Grill skin side down with lid closed for 6-8 minutes or until the fish lightens in color. 1. Then flip the salmon over and grill at 130°F for 2-4 minutes for medium-rare or longer until desired doneness. 5. If skin off: Grill 3-5 minutes on one side with lid closed or until the fish lightens in color. 1. Then flip the salmon over and grill for 3-5 minutes for medium-rare or longer until desired doneness. 6. Transfer to a platter, squeeze the remaining lemon juice on the fillets then rest for 1-2 minutes before serving.
